Shave Ice
in Hawaii is a part of the local culture and in this microculture it has evolved into a unique way to eat, enjoy and cool off all at once.  Shave Ice can be found in many places but in Hawaii each shop has their own texture of ice, home-made secret receipes for the syrup and even, in some cases ordering instructions, (helps when the line is long).

There is also a so-called "ranking" about five exist in the ranking and you hope to not be seen at an unranked place, you must be desparate.

Ice Garden
an un-ranked shop... but very good, they have an extensive menu with pictures and numbers.  Here you order by number and you can have such goodies as tapioca, chocolate syrup, carnation milk, red-beans and my favorite mochi balls all heaped on a fine mound of shave ice.  Traditional syrups need not apply.

Waiola, No. 2 or 3 depending on source.  Advantage... they are in town
they have been known to scold customer if they don't follow the procedures
"no shave ice, for you!"
